5/6 Ghz MLO requires WPA3, when you activated, likely many devices that can't do WPA3 will not be able to connect. The right way is just create a new SSID for MLO and use WPA3 enabled devices with that SSID.

MLO enable devices (most of them) can only connect to one band at a time, so likely your S25 prefer 5ghz

If I disable the 5GHz band from the SSID in which I have enabled the 6GHz band then none of my devices can see the SSID where the 6 GHz band is activated.  I have to enable the 5 GHz band and also the 6 GHz band in that same SSID so that the SSID can be seen by my devices.  After I disabled MLO my Samsung Tablet s9+ (which is older that the S25 Ultra) connects without problems to the 6 GHz band and the Razer 2022 Windows laptop starting connecting to the 6 GHz band also.  Why does my S25 Ultra which is newer than both this devices (tablet and Windows Laptop) cant connect to the 6 GHz band in the AP7?

Which region are you in? and where was the S25 Ultra bought?

Different country may have different restriction on which 6ghz channels can be used. You can check which 6ghz channel is automatically selected in the app. (AP Settings -> 6ghz band)

May be you can try to set 6ghz channel to a fixed one, such as 37. and check if it's better. (AP Settings -> 6ghz band -> change channel)
