Does the Gold’s DoH conflict with a VPN? I know that Cloudfare clients do, because at their base they’re vpn clients.

  DoH should not conflict with a VPN.    DoH is DNS lookup's, so if your client runs on the PC/MAC/Phone, usually DNS is inside the VPN pipe.  If you use Firewalla DNS, it will be the same.  

  The only possible issue you "may" run into is, if somehow your VPN is dependent on the DNS server returning the data ... (just a guess ... no idea if this will happen)
