(assuming I can even get this to work) would it be ok to run Omada controller, Pi-Hole and cloudflare ddns on my FWG?

Cloudflare DDNS is a small docker container and would be fine but there is already a built in DDNS in Firewalla. Pi-Hole is more resource intensive, but doable. I have no experience with Omada directly, but if it is like unifi, it is somewhat heavy. I run my unifi controller on my NAS. The safest approach is to set these up on a rpi or NAS, but the great thing about docker is you can try it on FWG and if it is too heavy moving docker to another device is easy to do.

I was just looking at the cloudflare ddns because the tutorial I was following to try and set this up was using some thing to update OpenDNS which in turn was updating Cloudflare... Or something like that.
I'm not a huge fan of trying to duplicate work. If I could figure out how to use the built in ddns I would in a heartbeat.

No worries, Christopher. One way is to use the Firewalla DDNS to update a CNAME or some domain hosts let you set an A record to Firewalla's DDNS such as Google Domains. So it is as simple as copy/paste your Firewalla DDNS to your DNS provider.
To clarify, I don't think Unifi controller is at all undoable on FWG. I even wrote an installer to do it. https://github.com/mbierman/unifi-installer. I also have one for homebridge https://github.com/mbierman/homebridge-installer
Just be aware of how you use Firewalla's resources and if you install docker containers prune them appropriately.
