Guest VLAN
I have the gold pro box, Switch X, a couple ceiling AP7’s and a desktop AP7. My question is can set up a VLAN using existing SSID’s? I want to start with a guest network and maybe branch out from there.

Yes, you can just assign an SSID to the VLAN network, see https://help.firewalla.com/hc/en-us/articles/37151746345491-Getting-Started-with-Firewalla-Access-Point-7#h_01JH3KJACXWAF2BSP88M5C0R24
If you have an old ssid, you can edit its configuration or delete and create the same one
