Advice on Complicated VPN Setup

I'd like to use a VPN to safeguard my email, browsing, texting, signal, and other traffic.  However, there are a few particular high traffic websites that I use that don't need VPN, so I'd like to exclude them.  

What I think I'd like to do is have all traffic sent over particular ports (https/https, imap, pop, smtp, etc) routed through the VPN with the exception of selected websites. 

Can that be done?  It looks like i can set this up using routes, but i don't see anything that governs what route configurations take priority over others.

  Routing via ports is pretty dangerous. 

  May I suggest you route all traffic to your VPN and then find the domains used by your other app and send them to your normal WAN?
