Wired network diagram - need help
I am bumbling through wiring up our 12,000 sqft building that is both personal home upstairs and commercial businesses downstairs. I am no network specialist, but I am hoping to get some feedback to try and curb some of our network issues. Most of the time we have a fine network, but there are times when the whole network suddenly slows to a crawl for no apparent reason.
The attached diagram shows our wires and where they go. Red is an unmannaged gigabit switch, blue is a wireless access point (AP) Linksys MX8000 Mesh. Most of the cables are custom made CAT 6 shielded riser cables. We have 500/500 fiber internet connected directly to a new Firewalla Purple.
Any help is greatly appreciated as again I am no network expert and I may be doing something fundamentally wrong (like none of the APs are connected directly, most have a switch in between).

When your network slows down, it can be so many issues. My advice is do some quick testing like here https://help.firewalla.com/hc/en-us/articles/360056875493-Speed-Tests-and-Speed-Optimization-with-Firewalla
Even this article say firewalla, we do have a few test tools (including the app) to help you verify the network
