I have three kids that range between 6-15 years and, needless to say, one size doesn't fit all when it comes to accessing the internet. My older one love watching Marvel videos which are blocked by YouTube SafeSearch. But if I disable that, the younger ones also get access to it. 

Is there a way to have SafeSearch disabled on YouTube for one of my kids but keep it on for others?

  Safe Search feature can apply to devices or device groups.   You can use that to segment kids.  Unless they share the same device, then it is your problem to find a way to time their access.

  I understand Safe Search can be enabled/disabled per user and box- that's not what I'm asking. What I am asking is if Safe Search can be CUSTOM for each user? So for example, have Safe Search enabled for all my kids but for one kid, YouTube Search from Safe Search is disabled.

  No, we do not support it.  Most of the "safe search" goes together.

  There is no way for the Firewalla box to know what "Profile" is running on your kids device. Amazon Fire Tablet has a good "Kids" or "Freetime" app that  allows you to specify the Childs age, and it tailors what they see in the app, and what they are allowed access to.

  I don't expect Firewalla to guess the age of my child but I would like to be able to configure Safe Search differently for each group that I have created in Firewalla. Easiet way would be to be able to save configs on Safe Search and then apply each config to a group instead of all all or nothing,

  You can set age filters on specific IOS devices via screen time>content restrictions. Did you try that option?
