Setup Purple to monitor bandwidth consumption in a specific situation

I would like to understand the best way to setup this configuration. 

• A router is installed that has and issues DHCP
• I have an ethernet port available to this router
• I would like to setup the Purple to broadcast an additional WiFi to be the man in the middle for a streaming device so that I can monitor its real time data consumption. I would also use the LAN port on the Purple to monitor this as well for another streaming device. 
• This would be a temporary solution strictly for demonstration purposes
• This is for showing customers how much bandwidth a device is using at any given time while demoing a satellite KA link to an aircraft. 

Is this possible to achieve?
