The 192.168.218.x or 192.168.168.x network is used when in DHCP mode. These networks will be customizable in the future. In case you are in the Simple mode, you can still connect to this network by connecting your device manually (static IP). Example, assign your iPhone IP to 192.168.218.88 mask 255.255.255.0, and DNS 8.8.8.8

In the example, wouldn't one want to set the default gateway and DNS server to the Firewalla, i.e., 192.168.218.1?

The DNS server will be whatever you had on your primary network. The DNS cache inside Firewalla will point to that one
